ABOUT WILAIWANS:
WE ARE A HUSBAND AND WIFE TEAM WHO MET IN THAILAND IN 2004. AFTER LIVING TOGETHER IN BANGKOK FOR A COUPLE YEARS WE MOVED TO VERMONT AND STARTED A FAMILY.
IN 2009 WE OPENED A SUMMER STREET CART IN MONTPLIER TO SEE IF PEOPLE WOULD LIKE THE THAI STYLE STREET FOOD WE LOVE. THIS WORKED OUT WELL AND AFTER 3 YEARS ON THE STREET WE DECIDED TO MOVE INDOORS TO MAKE OUR LIVES EASIER. ITS A LOT OF WORK COOKING AND CLEANING ON THE STREET WITH LIMITED FACILITIES. WE DID NOT WANT A SIT DOWN PLACE WITH TABLE SERVICE SO WE FOUND A SMALL SHOP ON STATE STREET THAT WE MODIFIED TO ACCOMODATE A COUPLE TABLES, A STOVE AND MOST IMPORTANT A 3 BAY SINK WITH GOOD WATER PRESSURE.
WE RUN THE RESTAUARANT COLLABORATIVELY BUT TRADE OFF ON COOKING AND SERVING EACH WEEK. WE SERVE CLASSIC THAI DISHES FROM MOSTLY CENTRAL AND NORTHEASTERN THAILAND. WE TRY OUR BEST TO HONOR THE INGREDIENTS AND FLAVORS ONE WOULD TASTE IF THEY WERE IN THAILAND. OF OUR 20 OR SO DISHES, WE OPERATE A ROTATING MENU AND ONLY SERVE ONLY 3 DISHES FOR THE WEEK. OFFERING A SMALL MENU ALLOWS US TO KEEP INGREDIENTS FRESHER AND CONCENTRATE ON QAULITY AS OPPOSED TO QAUNTITY. WE START PREPARING EARLY EVERY MORNING AND ARE ONLY ABLE TO SERVE WHAT WE MAKE FOR THAT DAY. THIS MEANS THAT ON OCCASION WE RUN OUT OF FOOD BEFORE CLOSING.
NOTE: NOT ALL THAI DISHES ARE SPICY BUT THE ONES WE CHOOSE TO MAKE HERE CALL FOR A LOT OF HEAT AND WE HONOR THAT. HOWEVER, WE DO TRY TO OFFER A MILD VERSION OF AT LEAST ONE OF THE WEEKLY DISHES UPON REQUEST.

AND A FEW RANDOM WEEKS THROUGHOUT THE YEAR FOR VACATION / DECOMPRESSING
